No! Seriously! They’re good!

Roasted Brussels Sprouts

Roasted Brussels Sprouts

I got home from work, hubby wanted to make tacos…but he had to do some work first..and I was pretty hungry.

Did I eat chips? No

Did I eat crackers and cheese? No

I said, hmm….I feel like having brussels sprouts…seriously! You can go from raw brussels sprouts to a yummy roasted snack in 20 minutes!! NSV!!! Vegetable snacking!

I grabbed my bag of sprouts, chopped off the bottoms, split them in half, tossed them in olive oil and baked them at 425 for 20 minutes! Voila! YUMMMY!

While I was waiting for them to bake I had a banana, a quick, sweet, tasty healthy treat.

But then, while I was waiting for tacos to be ready…I snacked on roasted salty brussels sprouts and watched TV…ate it just like popcorn or chips…mmmm mmm!!!

Another yummy vegetable appetizer that I’ve had  was at the Cheesecake Factory of all places…..on the Skinnylicious menu they have roasted artichokes…sooo yummy, too!

Keep those eyes open for new tastes!

Phew….glad that week is over..long weekend coming up, will include some running, weight lifting, sleeping in, dinner with my parents, cleaning and some..and I love the sound of this..doing NOTHING

I swear Slimgenics makes the weeks go by even faster….with meal planning and cooking in between everything else life has to offer. But as the weeks go by the weight goes down, too. I know I’m going to lose every week as I follow the plan, but I must let the time pass and I must follow the plan daily for it to work. No way to speed it up or anything…so go time go!

This week I was able to wear 3 items out of my “small clothes” bin to work…it made me feel so good! I lost another 1 lb this week but I think that’s because of girly stuffs and my body is just shifting around, which has gotta happen when you are losing weight quickly.  17 lbs down baby!

I wanted to show you guys a new dinner I cooked up tonight.  It was so savory and tasty, but fast, too. All of 15 minutes from start to finish!

Curry Green Beans and Broiled Tilapia

Meal for two

Curry Green Beans:

  • 1 steam bag (about 4 cups) of cooked green beans, drained
  • 4 TBS of minced onion flakes (soaked in a bit of water)
  • 3/4 TBS of curry powder
  • dash of salt
  1. Spray a pan with cooking spray and saute the soaked onion flakes for a few minutes on their own
  2. Add the curry powder and saute together for about 3 minutes.
  3. Finally add the cooked green beans and a bit of salt. You might add a maximum of 2 TBS of water so it won’t burn, but you probably won’t need it.  Saute all together another 5 minutes.

Broiled Tilapia

  • 12 ozs (two 6ish oz filets) of tilapia (or any other white fish like orange roughy)
  • dash of paprika
  • dash of dill
  • dash of salt
  1. Spray a broiling pan with cooking spray.
  2. Place the filets on the pan and sprinkle with spices…I like more dill than paprika personally.
  3. Broil for about 6 minutes…check halfway and maybe turn the pan around.
  4. Fish should be flaky, but not dry or fried, white through out and no clear spots

I hope everyone has a great weekend! Let me know if you try the recipes and if you like them! For Slimgenics this dinner was 2 vegetable servings and 1 protein serving per peson

The sucky:

Weighed in on Saturday afternoon and I was UP 1/2 lb from Friday afternoon.

The good:

I’m down 9 lbs in less than 2 weeks. I was probably UP because it was a different time of day than normal weigh in and my tummy wasn’t empty at weigh in like it normally is. Plus, <ahem> that girl thing.

The awesome:

I went to a birthday party last night.  There was GOOD beer being served and a taco bar that smelled amazing. Ryan and I ate dinner before hand and I cut up lots of on plan veggies and made a Tzatziki dip (sans cucumbers) that everyone (including Ry and I) LOVED.

I sliced red peppers, cucumbers, broccoli, cauliflower, sweet baby broccoli and celery to bring along.

This is the yummy recipe (which I doubled)

This is from a member of the Slimgenics website:

  • 1 cup plain greek yogurt
  • garlic powder to taste
  • 1/4 teaspoon of Morton’s light salt
  • Add 1/2 teaspoon dried dill and 1/2 teaspoon dijon mustard

To make:

Stir together, chill in refrigerator at least 30 minutes, the longer the better though!

I’m on the 3 day detox right now, so its not the full plan, but I wanted to share what was up and how I  am doing.

During detox I can have unlimited GREEN raw vegetables, unlimited fat free dressings, unlimited proteins, but no deli meat. Also 1 clementine or half orange in the morning and one in the afternoon. Also, 2 eggs in the morning and a prescribed amount of light salt, and Slimgenics vitamins and their thermo boost drink mix.

I am curious about how many calories I’m consuming when following the plan, so I’m also logging over on My Fitness Pal, too.

So today…if you’re curious I ate: (I’m not including vitamins or thermo boost drinks)

  • 2 sunny side up eggs w/Morton’s light salt
  • 1 clementine
  • snowpeapods, celery and cucumbers w/fat free blue cheese dressing
  • 6 1/2 oz filet mignon w/Morton’s light salt
  • 1 clementine
  • celery and cucumbers w/fat free blue cheese dressing
  • Costco rotisserie chicken (1 leg, 1 breast, 1 wing – no skin)
  • cucumber slices w/Morton’s light salt

I also had the full limit if 100 ozs of water and 2 cans of diet clear soda (Diet 7up)

I have to say that I was satisfied after breakfast of eggs for about 2 1/2 hours and then I started getting pretty hungry so I had the raw veggies, but I didn’t feel satisfied until I had steak at lunch time…then I stayed pretty full for about 3 hours, then it was time for my other clementine and more veggies. I was STARVING by dinner time and so ready to eat unlimited rotisserie chicken..mmmm now I’m happy and sipping on my 2nd Diet 7up and feeling pretty good!

Tomorrow…we have our actual orientation for the regular weight loss phase of Slimgenics that will start on Thursday and go for 21 weeks for me….I’ll tune back and tell ya’ll about my first impressions after the orientation, my shopping trip, and maybe how I might organize it all so I don’t get too anxious about food planning!
